My roommate lost his vegetarianism, so now I get to cook for the whole apartment without worrying about corrupting his diet or playing favorites by only cooking omnivorous food for just the other one. The three of us sat down to a meal together only once in over a year. Hopefully I can change that.

I made squash for the first time today (good stuff). And he liked my chicken a lot. I haven't killed anybody with my cooking yet -- professional chefdom, here I come. By the way, anybody with advice on what tenderizer goes well with Asian food, please share. Lemon juice works, but it doesn't go very well with soy sauce.

In Chinese cooking we do not use any special tenderizer other than baking soda. Maybe I should say in my cooking instead generalizing the whole Chinese cooking. You are supposed to use very small amount and let the meat sit for a while. Then preferably wash it off before you put in any other sauces and spices to marinade. You can keep it with all other marinade without washing it off but make sure the amount is very minimal. Otherwise you will have tender meat but ruin the taste. I expect to have our dinner ready when we come to visit in November.

Thanks mom! Guess it's time to buy some baking soda. I wonder how well meat tenderizer (papain) works.

I think I have tried it before. It works well. Make sure you buy the smallest quantity possible as it lasts a long time. If you buy good quality meat you should not need any meat tenderizer. Too much chemicals are not good for you.

The actual ten...

The actual tenderizing agent is simply a papaya extract. Whether or not the tenderizer has any extras to it depends on the manufacturer.
